Caseificio San Nicola is located about forty kilometers from Matera, where the ancient ritual of hand milking Podolica cows, performed only in the presence of their own calves, convey a strong belief in the ancient peasant values of an entire family, the Di Gilios. This rare bovine breed, together with hundreds of other heads of cattles of Comisana breed sheep and Maltese and Ionian goats, is raised in the wild withing the almost six hundred hectares of property. The processing of cow’s milk turns into special cheeses such as Caciocavallo Podolico.
